RECIPES FOR SWEET POTATO

SWEET POTATO AND SPINACH SALAD

½ Organic Sweet Potato, peeled and diced
2 handfuls fresh Organic Spinach
30g/1oz Organic Dairy House Butter
seasoning
1 tbsp Sesame Seeds
1 tbsp Organic Extra Virgin Olive Oil
1 tsp White Wine Vinegar
Sea Salt
freshly ground Organic Black Pepper

Cook the sweet potato in plenty of boiling water until tender and drain.


Heat the butter in a pan and cook the spinach for 30 seconds until it just begins to wilt. Add the spinach and sweet potato to a bowl and toss through all the other ingredients.

SPICED SWEET POTATO

1 Organic Sweet Potato, peeled
1 tbsp Organic Extra Virgin Olive Oil
1 tbsp fresh Organic Thyme, chopped
½ tbsp Paprika

Pre-heat the oven to 200C/400F/Gas 6.

In a small oven-proof dish, thinly slice the sweet potato. Sprinkle with olive oil, chopped thyme and paprika. Place in the pre-heated oven for 15 minutes. Take the dish out of the oven and serve.

Sweet Potatoes are delicious baked like a normal potato (although they don’t take as long to cook) and serve with butter or olive oil. Sweet Pots are also great for helping to balance blood sugar levels.
