RECIPES FOR RUNNER BEANS


BEAN SALAD

400g Organic Runner Beans – trimmed & sliced, boil/steam and refresh in cold water to stop them cooking further
200g Organic Broad Beans – boil/steam and refresh in cold water
3 Organic Salad Onions – skinned & chopped roughly
A handful of Organic Salad Leaves
1 Organic Avocado
1 Tbsp Organic Mayonnaise (optional)
150g Organic Bacon or Pancetta - chopped and fried until crispy
Season with Organic Salt & Black Pepper

Mix all the ingredients together dress with a Balsamic vinaigrette and fresh herbs such as coriander and chives and serve in a large flat bowl with warm crusty bread or new potatoes and a light chilled wine.
