RECIPES FOR KIWI

KIWI PAVLOVA

3 Organic Egg Whites
Pinch of Sea Salt
3 Tbsp Water
1 cup Organic Caster Sugar
3 Tbsp Cornflour
1 tsp Vanilla Essence
1 Tsp White Wine Vinegar
2 cups Organic Double Cream, whipped and sweetened
3 Organic Kiwifruit, peeled and sliced


Preheat the oven to 190C/375F

Mix eggs whites, salt and water. Whip to stiff peaks, slowly add the sugar while whipping. Then sift in the cornflour and add the vanilla and vinegar.

On a non-stick baking sheet, or waxed paper shape the mixture into a 9” round and 2” high disc. Place in the oven, turn off the oven and leave for 6-8 hours.

Remove from the oven. Decorate with cream and kiwifruit slices.

Serves 6-8
